What's Cooking?: Curried Lentils

Curried Lentils
Serves 6
Time: 30 minutes
 Ingredients: 
1 cup lentils
2.5 cups water
2 beef bouillon cubes
1 bay leaf
2 tsp salt
1/4 olive oil
1 glove garlic, minced
1 large onion, diced
2 Tbsp. curry powder
2 Tbsp. lemon juice
chopped parsley
6 servings prepared rice 
Boil together: lentils, water, beef cubes, 1 T. salt, bay leaf
Simmer for 20 min.

 Saute together: olive oil, garlic, onion
 Add: curry powder, 1 t. salt
Fry briefly
 Combine with lentils
Add: lemon juice, dash of parsley
Serve with rice.

This recipe is one that the hubs & I made the first week home from our honeymoon. It comes out of this recipe book called More-with-Less- a gem of a cookbook, a wedding gift from my old landlords the Mulder's from Orange City. It has fabulous recipes that are super easy, and super low budget! Does anyone else have this book? I highly recommend it to buy  for yourselves or give as wedding or graduation gifts.
