Zucchini Bread

 

The #socangarden has been producing an abundance of huge zucchinis. It's ridiculous. Really, we don't check on the garden that often because of my hectic work schedule, Mom's busy social life, and my sister's motherhood, so our plants get overgrown and out of control. 

What does that mean for us?

Lots & lots of zucchini bread. yes. please.

This recipe is so easy, so simple, and so yummy. 

Simple Zucchini Bread Recipe
Yield: 2 loaves

3 eggs
1/2 cup oil
1/2 cup apple sauce
1 3/4 cups sugar
2 cups grated zucchini
2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt

1. Preheat oven to 350°F.
2. Grease two 8×4 inch loaf pans.
3. In a large bowl, whisk the eggs.
4. Mix in oil and sugar, then zucchini and vanilla.
5. Combine flour, cinnamon, baking soda, baking powder and salt.
6. Divide the batter into prepared pans.
7. Bake loaves for 60 minutes (or until toothpick comes out clean).8. Cool & enjoy!
